Eating Right Made Simple: Quick, Healthy Snacks

As a mom, I think it’s essential to make sure my family and I have quick, healthy snacks ready on the go. If I don’t prepare the snacks ahead of time, we’ll end up eating junk. Here are some of my favorite snack ideas!

Caprese Bites
These cute little skewers are the easiest snack to make, and as a bonus, you can feel posh as all get out while eating them. I like to marinate my mozzarella balls before assembling my skewers, but if you’re short on time, it’s unnecessary. To marinate the mozzarella combine olive oil, salt, crushed red pepper flakes, and Italian seasoning in a small bowl and stir it up. Next, you’ll assemble your skewers with mozzarella, cherry tomatoes, and basil leaves. If you’re feeling extra fancy, simmer some balsamic vinegar for 15 minutes in a saucepan and drizzle over the skewers to complete your snack!

Zucchini Chips
I’ll admit it… I’m 100% addicted to salt. So when I found this potato chip dupe online, I was sold immediately. Making them is super simple too! Just take your mandolin and slice the zucchini super thin. Make SURE to squeeze the excess water out of the slices with a paper towel. Oil them up a bit and then pop them in the oven on 225 degrees for an hour and a half or until they start to brown. Salt those suckers up, and you’re done! They keep for a few days in a sealed zip-lock bag.

Fruit and Nut Bars
I love these because there is no baking required and they are the best grab-and-go snack. With eight ingredients, these are probably one of my more complicated snacks, but trust me, they are still quick and worth it! To start, line a pan with nonstick foil, leaving an overhang on both sides. Next, chop a cup of dates in a food processor and transfer them to a large bowl. In a small saucepan over medium heat, melt 1/4 cup peanut butter, 1/4 cup honey, and a dash of vanilla for about a minute until combined. Add the mixture to your dates. Throw in some almonds, pumpkin seeds, dried fruit, rolled oats, and there’s your mixture! Press it into the prepared pan and then freeze for 30 minutes. Afterward, cut into bars and store in the refrigerator.

Mixed Nuts
Nuts are a quick, easy snack that you can fill up fast on. A little go a long way, so to make sure I don’t overeat, I put some in little zip-lock baggies at the beginning of the week for a perfect grab-and-go snack.

Yogurt Parfaits
These are a staple in our family! It’s a great way to trick my boys into eating some fruit. With just five ingredients, it doesn’t get quicker! I take a mason jar and add plain non-fat Greek yogurt, strawberries, blueberries, granola, and a little bit of honey. Viola a quick, healthy snack at your fingertips!
